But one thing common was that; everybody liked the flavor of the recipe made with mustard. Mustard enhanced the taste of the food to a great extent. Mustards were used with any kinds of foodstuffs from non-vegetarian foods like fish, meat chicken to vegetarian food like cabbage, sausages etc.
Gourmet mustard is mixed with wine, vinegar, spices, sugar etc. and is used with the different food items. It not only enhances the tastes but also makes the food rich with different nutrient contents. The different varieties of mustards available in the market are white mustard, Creole mustard, black mustard etc. each having a unique quality of its own. Black mustard has pungent smell whereas white mustard mixed with vinegar and sugar tastes sweet. Vinegar and wine is considered to be an important ingredient of the mustard. Pope XXII showed great liking for mustard and he was the first pope in the history of Vatican to appoint a mustard-maker for himself.
He appointed his nephew as the mustard-maker. Queen Victoria too had great liking for gourmet mustard and she made Jeremiah Colman as her mustard-maker. Jeremiah Carlon popularized the mustard and today also Carlon mustard is widely used across the globe. Vasco de-gama brought mustard to India. Mustards are used in several different ways. It can be used as a vegetable, can be used to prepare recipes and it can also be used to extract oil from it; Infact mustard oil in India is very popular.
Mustard seeds have wider applications today and for preparing different recipes using mustard seeds different procedures are adopted. Mustard seeds can either be completely crushed, or it can be partially crushed or it can be used as a wholegrain. These different varieties can be used differently in the preparation of different foodstuffs. Water and vinegar should be properly added to gourmet mustard. The whole stuff should be properly mixed in a bowl and kept at a proper temperature preferably at room temperature.
Vinegar is considered to be an important ingredient as it helps in preserving the taste and it also prevents the mustard recipes from getting spoiled. Mustard prepared cannot be used instantly; instead it should be used only after 2-4 weeks.

In its “Tastes of the World” program Chef’s Studio joined with chefs of New Orleans at the annual New Orleans Wine and Food Experience to explore the best in Cajun and Creole dishes, and enjoy them with wines from around the world.
July 5, 2004 — Chef’s Studio went on location to New Orleans for a week of Cajun and Creole cooking, one of the studios featured “Tastes of the World”, thanks to The New Orleans Wine and Food Experience. Top chefs invited hosts Alan Simpson and Linda Schnabel to their restaurants and homes, to sample both traditional and new creations. These included Arnauds, Brennans, Maison de Ville, Mr. B’s and The Rib Room. Chefs from many other restaurants joined them at the Convention Center, to explore many more dishes, with hundreds of wines from around the world. The Omni Royal Orleans Hotel provided an excellent base, and the weather proved perfect for filming in the French Quarter, French Market and of course during the many events, including the Royal Street Parade.
Besides offering their expertise and insights, many chefs took the opportunity to discuss their on-camera skills and to learn tips on media and presentation techniques. “Whenever possible we take time to advise the chefs on their presentation techniques, and often retake the interviews with a significantly improved performance,” explains Alan Simpson. “Chef’s Studio is a collaborative effort and as we learn, we believe in giving some of our expertise back to the chefs, our guests on the programs.”
The Annual New Orleans Wine and Food Experience is one of the top wine and food experiences in the United States and an ideal setting to meet with both established, and up and coming chefs. The unique party atmosphere of the French Quarter gives the perfect backdrop to celebrate the enjoyment of wine and food. In 2005 Chef’s Studio will expand its presence at the New Orleans Wine and Food Festival with many more interview opportunities, for chefs to talk about their ideas, and showcase their skills before a live and TV audience.

seemameet asked: Summer is here and if you are anything like me, you don’t want to turn on your oven or stove unless absolutely necessary. I do most of my cooking in the microwave during the summer months. It helps keep my home cooler and cuts down on my cooling bill.
I have found that many people don’t like to cook meat in the microwave. I was once one of those people. Chicken would come out like rubber and I always worried that ground beef didn’t cook thoroughly. I have since found that the trick is to use the right cooking utensils.
There has also been some hype about how it’s not safe to use plastic to cook meat or anything else in the microwave. This is only half true. Certain types of plastic have chemicals that are activated with the extreme heat of the microwave and these chemicals can get into your food. Basically, use containers that are specifically designed for cooking in the microwave.
My preference in microwave cooking is Tupperware. Their cookware is specifically designed for the microwave so you don’t have to worry about the chemicals. Their Oval Cooker is designed to retain the moisture of your meat so that your meat doesn’t come out dry and rubbery. It also has a colander so you can brown your meat and let the grease drip to the bottom. That makes it easy to dispose of the grease drippings or use them for gravy. Cooking Ground Beef
Place the ground beef with your favorite seasoning in the colander of the cooker. Cover and cook for 6 minutes per pound. Let sit a few minutes then remove from the microwave. By using the colander all the grease will drain to the bottom of the cooker.
Cooking a Whole Chicken
If using the Oval Cooker you will need to use the extender piece for your average size chicken. Then place the chicken in the cooker. Pour about half a cup of water on the bottom of the cooker. I think you will be surprised at how moist your chicken comes out.
Cooking Cut Up Chicken
After cutting up your chicken use the same instructions for cooking a whole chicken. Determine by how high the chicken stacks if you will need to use the extender or not.
Cooking Chicken Pieces
You can use the colander to cook chicken pieces. Cut the chicken into bit size pieces. I usually use chicken breast cutlets for this. Place the cutup chicken pieces in the colander. Season with your favorite seasonings. Place the cover on the cooker and microwave for 6 minutes per pound.
Cooking Pork
I have not yet tried cooking pork in the microwave. Pork is tricky and my family doesn’t eat pork so that is one reason I have never tried cooking it in the microwave. However, there are plenty of beef and chicken recipes out there, so I hope the above suggestions will help you keep your kitchen cooler during the hot summer months.

INGREDIENTS:
* 1 8- to 9-pound leg of lamb, main bone removed, shank bone intact, tied (your butcher can do this for you)
* 2 cloves garlic, finely chopped
* 1 1/2 tablespoons dried Greek oregano
* 1 lemon, cut in half
* 1/4 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 1/2 cup dry white wine
* 2 1/2 cups chicken stock
* 1/2 cup olive oil
DIRECTIONS:
1. Take the leg of
lamb and place on a clean cutting board. In a separate small bowl, mix the garlic, oregano, salt and pepper. Roll the lemon on cutting board, cut it in half, and squeeze the lemon juice into the bowl; add 1/3 cup of olive oil and mix thoroughly. Massage the entire lamb with the olive oil mixture top to bottom, making sure you get it into the bottom crevices of the lamb.
2. Place the lamb in a resealable plastic bag large enough to hold it and remove all the air, or wrap it tightly in plastic wrap. Place the bag or the wrapped
lamb in a baking dish and refrigerate for at least 3 hours preferably overnight. When ready to cook, preheat oven to 450° F. Remove the lamb from the refrigerator, unwrap and set aside.
3. Place a large, heavy-gauge metal roasting pan into the preheated oven for approximately 10 minutes.
4. Take one tablespoon of olive oil, drizzle it onto the lamb, and then season the lamb with a generous amount of salt and pepper. Rub the salt and pepper and oil into the lamb. Open the oven door and add 2 tablespoons of olive oil to the pan; then place the lamb in the pan fat-side down and close the oven door. Roast for 25 minutes; turn the lamb over and roast for an additional 10 minutes.
5. Remove the lamb from the oven, pour in the white wine, and add the stock. Turn the temperature down to 400° F and return the pan to the oven. Basting frequently with the juices, roast 30 to 40 minutes, making sure that the pan juices do not dry out (if it looks dry, add additional stock or water as needed).
6. Pull out and let rest 15 minutes. Remove the kitchen twine and slice the lamb. Strain the pan juices and serve over lamb. For more details visit
