francesco speciali asked: Compared to the whole world Italy is a really small country but it has a very particular aspect that makes it different: having century of history and traditions that gave to Italy a deep variety in every single region of its territory.
Italy is composed of 21 districts and everyone of these has his own traditions and dialects and obviously every one has his own food tradition. The main Italian foods worldwide are pasta and pizza but if can travel Italy from North to South you can taste the local dishes unknown to the world.
For example the North of Italy, during Winter time, has a typical food made just with corn flour, the polenta. The versatility of
polenta allows Italians to offer it in several ways but the most famous
polenta recipe is to serve the
authentic Italian polenta on a wood made dish with meat juice and sausages with Parmiggiano cheese. It needs to be served hot and in the North of Italy is a real tradition eaten almost every day during the cold winters. It is important to eat polenta with a good red wine.
The
traditional polenta requires a long preparation that in the North of Italy becomes almost a family event. The polenta get usually eaten with many people or with the whole family so, since the early morning they begin to hot water and to stir the great quantity of
polenta that needs hours to be ready to be served.
After a full morning of skiing it is traditional to drink wine and to eat the
Italian polenta; in the last years to face the taste of more people possible, they started to offer
polenta not only with meat juice but also with mushrooms, without juice, just with cheese or with some nouvelle cuisine ingredient like rare fish or vegetables.
In any case, the
traditional polenta remains another precious element of Italian traditions and allows many people to enter in contact with the history of a part of Italy , the North one, full of history and traditions.

Steve Buchanan asked: Nowadays Italian food is getting popular day by day all over the world. People of every country have started liking this food. If you are one of them who like pasta very much then you must love this cooking because this is one of the main ingredients of most recipes. As with all ethnic foods, this eating uses its own group of spices. These are a number of most popular spices which are used in this cooking; these spices are garlic, oregano, basil and thyme. If you will use fresh spices in your cooking then it will really add a special touch to any dish, but if you are unable to find fresh and then you can use the dried spice. You can buy these spices in small quantities and you need not keep them stored in a cool, dark place, not over your stove on a rack.
The heart of this cooking or eating is the use of ingredients. These ingredients are available in all the seasons. These ingredients are used to change ordinary items into works of art in the form of pastas, side dishes, breads, sauces, main dishes, deserts and soups. The possibilities are rally endless and very exciting. If you are really Italian food lover then you must buy cookbooks so that you can easily increase the taste of your food. These are a number of recipe books that have pictures of the completed dish so that you will able to know what it should look like. These books can help you a lot if you have never seen the dish anywhere. It is really best to follow a recipe when you first start to learn a new recipe but don’t be panic to start experimenting once you have the basics down.
Following are some ingredients that you need to have in your grocery list.
1) Tomato Sauce:
Tomato Sauce is one of the important ingredients. You need not have to buy the expensive tomato sauce. The national brand or house brand at your nearby local grocery store will be fine in your Italian dish. Try not to buy from the “pre-seasoned” blends, as you will be adding your own spices and herbs.
2) Pasta:
It is highly recommended that you should not buy a huge quantity of any specific pasta. It is preferable to keep a little amount of the most regular types such as wide egg noodle, large and small shells, elbow macaroni, linguine and spaghetti. It will be good if you have storage so that you can keep the long noodles in a long container. Moreover, you can find many Tupperware makers that are specially design to keep the pasta in to maintain freshness.
3) Parmesan Cheese:
Freshly ground Parmesan cheese is always a welcome addition to the top of any Italian dish even though it may not always be needed in the ingredients of the recipe you are cooking. The famous cheese brand, Kraft, has a new product with a block of cheese in its container along with its grater.
4) Olive oil:
Olive oil is also one of the integral parts of ingredients. One of the mistakes that many Italian food amateurs make is using pricey olive oil for things like pan-frying. Using the standard olive oil, which is yellow in color, is just fine for this.

EASY ITALIAN MARINARA SAUCE RECIPE
Here is a great recipe for marinara sauce using canned tomatoes. This marinara sauce is delicious over your favorite pasta, on top of pizza and over mussels and shrimp. The beauty of this sauce is that it can be used with a number of other recipes, so it’s a great starting point in Italian Cooking and it is very easy to make.
You can use either fresh or canned plum tomatoes for this recipe, however using fresh tomatoes requires more time and preparation, so I prefer to use canned. If you do plan on using fresh tomatoes, make certain the tomatoes are ripe and in season.
For the canned tomatoes, I prefer Rienzi brand tomatoes. I have tried a number of different brands of canned tomatoes and Rienzi has the best flavor amongst the supermarket brands, in my opinion.
Marinara Sauce Ingredients:
1/4 cup extra virgin olive oil
4 garlic cloves, peeled and chopped (More or less depending on how much you like garlic)
1 35 ounce can of whole plum tomatoes with liquid
Salt to taste
Crushed red pepper to taste (You can use black pepper if you wish)
10 - 12 fresh basil leaves , torn
1/2 teaspoon of dried oregano
Directions:
1) Open your can of tomatoes and crush them by hand into a bowl and set aside.
2) Heat the olive oil in a large saucepan over medium heat. Add your garlic to the oil and cook until soft and lightly browned. Be sure to watch the garlic to make sure it doesn’t burn.
4) Carefully add the tomatoes along with their liquid into the pan with the garlic and oil. Use caution when adding the tomatoes to the hot oil. The oil can splatter. Add the oregano.
5) Stir the mixture and bring to a boil. Season with a bit of salt and red or black pepper. Lower the heat so that the sauce is reduced to a simmer. Break up the tomatoes as it cooks with a spoon until your sauce is chunky. You want the sauce to simmer until thickened, about 20 - 25 minutes.
6) Add your fresh basil a few minutes before the sauce is done. Taste the sauce and add more salt or pepper if needed.
7) Serve over your favorite pasta.
EASY ITALIAN PESTO SAUCE RECIPE
Let’s learn how to make pesto sauce.
This is another very easy and delicious recipe that can be served over your favorite pasta, grilled chicken, mussels or as a topping for pizza. For those of you who want your basil pesto sauce without pine nuts, you can leave them out or substitute the pine nuts with walnuts.
For a nice variation on this recipe, try adding sundried tomatoes to the pesto mixture before blending for a delicious tomato pesto sauce.
This recipe should only be used as a guide. Not everyone has the same preferences. Some do not like a lot of garlic or olive oil flavor for example, so it is recommended that you experiment until you find the right recipe.
Pesto Sauce Ingredients:
4 cups fresh basil leaves
3/4 cup chopped walnuts or pine nuts (the nuts can be lightly toasted in a dry pan before blending for added flavor)
2 cloves garlic, peeled and chopped (more or less depending on your taste)
1/2 cup of grated Parmesan cheese
1/2 cup of extra virgin olive oil
salt and pepper to taste
Directions:
Add all ingredients to a food processor or blender except olive oil. Add a little oil at a time and process until sauce reaches desired consistency. Ready to serve in your favorite dish.
EASY PASTA WITH GARLIC, OIL AND FRESH HERBS
This is another quick and easy Italian recipe with only a few ingredients. It is important that you do not burn the garlic with this recipe otherwise it will become bitter.
Ingredients:
1 pound of spaghetti
3 - 4 garlic cloves chopped (more or less, depending on how much you like garlic)
1/2 cup reserved pasta water
1/4 Cup of Chopped Italian Flat Leaf Parsley
1/4 cup of chopped fresh basil leaves
6 tablespoons of extra virgin olive oil
Salt to taste
A pinch of red pepper flakes (more or less depending on how spicy you like it)
Directions:
1) In a large pot, bring about 6 quarts of salted water to a rolling boil. Add the pasta and cook for about 6 - 8 minutes or until al dente. Drain but make sure you reserve about 1/2 cup of pasta water.
2) While the pasta is cooking, heat 4 tablespoons of olive oil over medium heat in a large skillet. Add the garlic and saute until light brown in color. Remember to pay close attention to the garlic to make sure it doesn’t burn. Remove from heat.
3) Stir in fresh herbs, red pepper flakes, and few tablespoons of the reserved pasta water. Mix until combined.
4) Transfer the drained pasta to a large serving bowl and mix in the remaining olive oil and pasta water.
5) Add the garlic and herb mixture into the pasta and mix well.
6) Taste and add salt and red pepper if desired.
7) Serve immediately. Top with grated cheese if desired.

ajays_operations asked: The sizes range from 50cm to 60cm with most of the manufacturers who promote freestanding cookers. A freestanding unit offering oven, grill and hob in one appliance, designed to slide between kitchen cabinets. Cookers have adjustable feet to fit flush to worktop height.
If you have gas you may wish to consider a dual fuel cooker as these combine the speed of an electric oven with the flexibility of a gas hob.
As well as these options, further options available include double oven cookers, allowing you to cook within both ovens at the same time; single oven with separate grill, allowing you to cook in the grill and oven at the same time; single oven and grill, allowing you to cook on either the grill or oven but not at the same time and fan ovens which cook more quickly that conventional ovens.
Then there are many choices to make on the extra features available on a modern cooker. Here are examples of the main choices:
Conventional ovens
Conventional ovens can be gas or electric. For more details visit us at www.cat-head-biscuit.com. In a conventional gas oven, the heat comes from the gas burner at the rear bottom of the oven. In a conventional electric oven, the heat comes from elements under the base and at the top of the oven.
In a conventional oven, heat rises to give a hotter temperature towards the top of the oven, and a slightly cooler temperature towards the bottom of the oven.
The heat zones in a conventional oven make it ideal for cooking a number of dishes together, where different cooking temperatures are required. Conventional ovens are perfect for traditional cooking for things like cakes and roast meat.
Electric grill
Electric grills consist of either single or dual elements, and may have fixed or variable heat settings, depending on the model. The heat output of variable grills can be controlled by turning up or down, between low heat and high heat settings.
Fan assisted ovens
A fanned oven has an even cooking temperature throughout the oven as the fan circulates the heat. This makes it perfect for batch baking. Heat comes from the element in the back of the cavity, bait in the middle or top of the oven, and the hot air is circulated around the oven cavity so that an even cooking temperature is achieved throughout the whole of the oven.
Fanned Grilling
Available in ovens showing multifunction and fanned ovens in the specification.
Heat comes from the grill element, and hot air is circulated around the food, so that there is no need to turn during grilling. Ideal for grilling meats as it helps cook through the food as well as browning it.
Fan and base cooking
this feature is available in selected multifunction ovens only.
Heat comes from the element in the base of the oven, and is circulated throughout the oven by the fan. Ideal for cooking moist dishes where the filling and the base need to be cooked evenly.
Hotplate lids
some freestanding and range cookers feature hotplate lids. These are toughened glass on some models, or solid cast iron lids on our more traditional Farm style range. Lids to gas hotplates (on gas or dual fuel models) have a safety feature - so that if the lid is accidentally closed while a hotplate burner is on, the hotplate burner will be switched off.
Automatic programmer and clock
An LED automatic programmer - clock has a full 24 hour digital clock display.
It also has a minute minder function and its main function is that it can be programmed for automatic cooking in the oven under control of the programmer. You can also visit us at www.cajuns-recipes.com. You can set cooking start time, or end time, along with the length of cooking time required. When the programmer reached the end of the cooking time set, it will automatically switch the oven off.
Minute minder
The LED minute minder / clock have a 24 hour clock display. It also features a minute minder function - which acts as a timer to let you know when you’re cooking needs attention. The desired time is set, and an alarm will sound after the time set has elapsed. The minute minder works independent of the oven, so if you’re cooking needs an extra few minutes, there’s no need to reset the oven.
Multifunction oven
A Multifunction oven is an electric oven which has many cooking functions. These functions will include a selection of the following; fanned oven cooking, conventional oven cooking, grill, fanned grilling, base heat only, top heat only, fan plus base heat, intensive bake and defrost.
Paralytic
these ovens usually have a triple glazed door so the oven can withstand the heat required to burn off excess food. The ovens go to extremely high temperatures and automatically lock themselves so you cannot get close to the heat produced.
Shelve supports
Most ovens feature removable shelves and shelf supports. This makes cleaning even easier - especially as they can be cleaned in a dishwasher.
Shelves can be placed in a variety of different positions inside the oven, so that you can position the food you are cooking at the perfect height.
Stay clean liners
Stay clean liners help reduce dramatically the amount of cleaning an oven needs. The special coating burns off most of the fatty by-products and food splashes on impact, leaving your oven much cleaner and needing less wiping.
Top heat only
this function is available in some Multifunction ovens, and some electric conventional ovens.
Heat comes from the element at the top of the oven. Top heat is ideal for browning the top of oven cooked dishes.
Inner door glass
most ovens feature an inner door glass panel, which is removable for easy cleaning.
Warming plate
a heat resistant toughened glass warming plate is a feature of some electric range cookers. It is perfect for warming plates before serving, or for keeping a pan warm at a low heat before serving.
Wipe clean enamel interior
this is a smooth hard wearing enamel oven or grill interior finish, which can be wiped clean after use

Ajay Kumar asked: Cooking every day can be a difficult task especially if you are a working mother. Many mothers or families in general have a different approach to cooking that can be very useful. The way to manage a fast passed career oriented lifestyle and a family is to cook few times a month and store the food for later. In other words cook smart. Unfortunately, cooking a good family meal requires both time and energy. A few wise moms are using a concept that has become known as once a month or freezer cooking to assist them when they don’t have enough time and energy to cook sometimes. The plan is to cook once a month; you can take it literally or not. You can do it twice a month but the idea is the same. Similarly you can do the cooking in one day or two days but either way the concept is the same.
Many working mothers who have tried this technique have concluded that not only does it help by always having something nice and home cooked for dinner, but also helps families stay within their budget. The reasons are that they don’t spend money on cooked meals and that they can plan their shopping in advance when grocery stores have sales. The most important aspect of saving time and energy by cooking only once a month is to plan ahead. To do this you will need to set aside a day or two for the cooking, days that are free. You will also need to plan ahead and decide what the cooking will entail. For more results visit us at www.delicious-candy-recipes.com.
In other words decide on what you will cook what recipes you will use so you can do the necessary grocery shopping. Make sure you have planned for a whole day of uninterrupted cooking. The reason is, distractions or other chores you might want or have to do can steer you away from the task at hand; the task of feeding a family for a month. First thing is first and that’s why you should create a menu and thus figuring out all the ingredients you will need. It is a advised that you do the shopping, or have someone do the hopping for you on a day other than the one you will be doing the cooking. You can also save money by planning your meals for the month according to the sales circulars and coupons you have for the week in order to stretch your budget a little further. It is also advised that you stock up on containers to use to store the food in the freezer. You can do this by storing individual portions or even family portions depending on what you are accommodating for. You should also make sure that the recipes you are using for your once a month cooking marathon are recipes that freeze well.
Regarding the cooking session itself, planning is again the key for success. Make sure the kitchen is tidy, that all your appliances are in working order, that you have all the tools to use to cook and you are set. You can also go to www.chef-123.com. Use all your appliances, for example do one dish on the stove top, another in the oven, one more in the microwave and so on. Keep in mind that if you don’t have enough time to do something it probably is because you don’t have the right tools to do it. A blender, a juicer for sauces and deserts, good sharp kitchen knifes a digital scale are only a few examples.
Use technology to save time. Remember time is money, that’s why you considered once a month cooking in the first place. Once you do it once you will never forget how to do it again. Save time and money with once a month cooking. In order to be able to cook once a month you need to have the right time management skills and the right cooking tools and appliances. Here are some you might want to consider.

T Lynch asked: When cooked, a fork can easily poke through the skin, and the flesh will easily separate into long strands with a fork. The average 4 pound squash will give you about five cups of flesh. Use the “spaghetti” right away, or place in freezer bags in the freezer for use at another meal.
These best five ways to cook spaghetti squash are in the order of cooking time.If you have all day, set the crock pot on, or if you like that fresh baked smell to fill the house, bake it in the oven. If you just want to get it done and start eating as fast as you can, I would suggest the microwave. Try out all the different ways and see what you like best!
#1 - In the Crock Pot - Pick a squash that can fit in your crock pot whole. Pole holes through the shell with a fork, and place in the crock pot. Add a couple of cups of water, and cook on low for 8-9 hours or until fork pokes through skin easily.
#2 - In the Oven, Whole - Poke holes in the skin several times with a fork. Place the entire squash in the oven. Cook at 375F for about 1 hour, or until soft.
#3 - Boil in a Pot - Find a pot big enough to hold your squash. Fill with enough water to cover the whole squash and set to boil. When the water is boiling, add the squash and cook 20-30 minutes until fork pokes through skin easily.
#4 - In the Oven, Halved - Cut the squash in half lengthwise, and scoop out the seeds. Place open sides down onto a baking sheet and place in the oven. Cook at 375F for 20-30 minutes or until skin is easily poked with a fork.
#5 - Microwave in a Dish - Cut the squash in half lengthwise, and scoop out the seeds. Place squash in a microwaveable dish with the open side up. Add a few cups of water, and cover with saran wrap. Cook for 10-12 minutes. Let it sit for 5 minutes covered, then test to see if it is done, and cook longer if needed.
I found that slicing the squash in half and scooping out the seeds first, before it was cooked was easier then scooping out the seeds after, and trying to sort out the flesh from the seeds when cooked together.
Here are some good spaghetti squash recipes to use cooked squash.
Spaghetti Squash Recipe with CheeseThis is also a really quick dinner especially if squash is cooked ahead of time. If you like cheese, and squash this will quickly become a favorite dish!
